Local Spotlight: Desert Magnolia BBQ

 

If there is one thing that all the Indie Ogden team members can agree on,  its good food and when we heard about desert magnolia, we just had to learn more. Located in Roy and  serving up some of the best BBQ around it is a place you do not want to miss. The folks at this BBQ joint  have won a ton of 1st and second place awards at  BBQ competitions so you KNOW it is good. After scouring  their site and facebook we decided we had to stop in so the other day some of the editors  ventured out to Roy to see what the  buzz was about. After thinking we got lost we smelled the smoker and tracked them down next to the trampoline park. The smell was intoxicating and when we saw the smoker we knew we were in the right place.

When we walked in the first thing I noticed was the amazing tables. Brad, the owner, built the tables  himself as well as put together  the interior decor. The window you order from looks like a rustic barn and  the whole place is drenched with the smell of BBQ. After oohing and ahhing over the different sauces and smells of meat we sat down to order. Of course I couldn’t decide what to order so I asked for a sample plate of all their meats with sweet potatoes, collard greens and corn bread. After a short wait our food came out  and I slathered it in their house made blackberry BBQ sauce. It was food heaven, food bliss, food nirvana!

It has been so long since I have had real home cooked southern smoked BBQ and boy have I missed it. After the first bite I knew that I was heading down a  dangerous road of BBQ addiction. The flavors are so rich and the meat is so tender you don’t even need a knife. But, you don’t need to go to the restaurant to try them out, they also do catering and BBQ competitions (next one Nov 9th!) with the Utah BBQ association.

Tell our readers a little but more about Desert magnolia BBQ, who owns it and how did you get started?

Desert Magnolia BBQ, a southern pit BBQ joint,  is owned and run by Bradley and Nicole Trammel. Brad grew up in Northern Alabama and Georgia, where BBQ is a way of life. He went to culinary school in Portland, Oregon. He worked in several restaurants in Seattle and Tacoma before coming to Utah. He’s been here since 2002. Nikki grew up in Ogden, but has lived all over the South while in the Army. She works full-time, and slings BBQ as a side gig. In late 2009, we started doing BBQ catering and the Ogden Farmers Market, it was just something fun to do the bring in some extra money, and it has grown on its own since then. In June 2011, we opened the restaurant for takeout service and it continues to take on a life of its own.

What makes Desert Magnolia different from other BBQ joints?

Our BBQ is different from most you can get in Utah, because we aren’t a chain. We cook all our meat outside, and we make everything from scratch – our rubs, our sauces, our sides. Everything is homemade; even the ground meat we use in our meatloaf and sausage specials! Brad is a chef, that’s just the way he does things – some of the sides are even mixed to order! We try to keep everything sourced as locally as possible, and keep seasonal and fresh items on the menu. We make all 6 of our sauces from scratch (Only Brad knows the recipes…) so picking a favorite is hard. But if you twist Nikki’s arm (only slightly,) she’ll tell you to mix the Blackberry and the Mustard sauces!

Tour of  their specialty sauces:
*Sweet Blackberry (Gluten Free) (Swwweet) A Sweet Fruity version of a Southern Favorite
*Spicy Chipotle (MED) A smokey spicy Tex-Mex inspired Sauce
*Hot Carolina Mustard (MED) A Mix of 3 mustards for a great kick (Nikkiʼs Favorite – try it mixed with the Blackberry!)
*Squeeler (Gluten Free) (~HOT~) Vinegar based Piggy Sauce is an art in the Carolinas – and this is as traditional as pig-pullinʼ sauce gets.
*Wasabi White (Gluten Free)(~VERY HOT~) A Deep South Secret, usually made with white horseradish, ours has the heat turned up by using Wasabi  Horseradish

What do you love about Ogden?

One of the things that makes BBQ-ing in Ogden unique and different, is the weather – Cooking outside year-round here has some unique challenges! Other than that, Brad and Nikki live in Ogden because there is always something interesting to do, and it’s a giant outdoor playground. :)

A few things our readers should know about you?
Things you should know about us: Brad runs sled dogs on the weekends, he loves his Harley, and he is a very humble guy. Although Nikki works as an engineer full-time, she is an accomplished cook and helps out at Desert Magnolia BBQ regularly.
